This will brighten up a cold winters day.
The best thing about it...I spent the whole afternoon cooking for the week, and I didn't crave. Except for thinking about this site, I probably wouldn't have thought about smoking. Anyway, wanted to share, because it was so good....and healthy too.
BAKED TOMATO CILANTRO CHICKEN Makes 4
1 tblsp lime juice 1/4c chopped fresh cilantro or
1/2 tsp salt 2 tsp dried or 3 tblsp dried parsley
1/8 tsp ground hot red pepper 1/4 lbs ripe tomatoes (4 medium)
2 tblsp olive oil.
4 chicken breasts, slightly 4 oz shredded Monterey Jack or
flattened Mozza cheese...about 1 cup
1 med onion, chopped
1 green pepper, chopped
1 garlic clove, chopped
1. Preheat oven to 400 degrees.
2. Combine lime juice, 1/4 tsp salt & ground pepper in medium sized bowl. Add chicken, turn to coat. Let stand 10 minutes.
3. Heat 2 tblsp oil in skillet over medium heat. Add chicken and saute until lightly browned. Remove to paper toweling to drain. Add onion, green pepper and garlic; saute until tender, but not browned..about 4 min. Stir in cilantro.
4. Place 2/3 of tomato slices in bottom of 9" square baking dish. Sprinkle with 2/3 of onion mixture and remaining 1/4 tsp salt. Sprinkle with 2/3 cheese. Arrange chicken in layer over cheese. Top with remaining tomato and onion mixture.
5. Bake at 400 degrees for 15-20 minutes or until tender. Don't overcook. Sprinkle with remaining cheese. Bake 5 minutes until cheese is melted.
